The Irish Spirits Association report that Irish Whiskey is becoming a world leader, as the fastest growing spirits category, and it is predicted that exports will exceed the 2020 target set by the Irish Whiskey Association of 12 million cases. Whiskey makes up 42% of Ireland’s beverage exports, and global value of premium Irish Whiskey is on the rise.
I’m sure it comes as no surprise to anyone vaguely familiar with the Irish drinks scene that Premium Irish Whiskey and Gin are the fastest growing spirits in the country. The 2017 Irish Spirits Report found that Premium Irish Whiskey Sales were up 40% in 2017, and this growth has only increased since. Regular old run of the mill whiskey is no longer enough for the diligent Irish market who recognise the importance in making thoughtful choices, as they opt for higher quality drinks. Premium Irish Whiskey ticks all the boxes. There is something about Whiskey. As it swirls around the glass it echoes Irish heritage - even in the hands of the most modern Irish Whiskey drinker. Providing an inimitable experience to the nose, the palate, and - most importantly- the soul, there is simply no substitute for Premium Irish Whiskey.
It isn’t all sunshine and rainbows in the world of whiskey, however, with experts predicting Irish Whiskey shortages. Despite the poetically named Irish Whiskey Renaissance, and surge in distilleries popping across the island, it is predicted that producers will struggle to keep up with increasing demands. The Irish Times have reported the concerns of whiskey tycoon John Teeling, amidst the increased demand for Irish Whiskey globally. The Irish Whiskey Association have announced plans to double their 2020 target of 12 million nine-litre cases of spirits sold globally by 2020, to 24 million by 2030. The industry is certainly facing challenges in supplying market demands, but the very nature of the Whiskey production process as involving lengthy maturation, means over the coming years, we will see the products of newer distilleries entering the market.
So you’re thinking; “Sure, I love Whiskey, but how is any of this really going to impact me?” Well, curious reader, we are offering an opportunity for you to get involved in Premium Irish Whiskey production and sales (And of course, the most enjoyable aspect - consumption!).At Blacks, we are preparing for our distillery expansion, later in 2019, and the arrival of two new Whiskey stills which will allow us to make Blacks Pot Stilled Single Malt Premium Irish Whiskey, right here in Kinsale. Our Distillery Founders Club, which will in part fund the distillery expansion, is the opportunity to secure your very own cask of Irish Whiskey.
The first 500 casks of 2020 production are available through The Founders Club, to be personalised for each investor, and once filled will mature for 5 years. After 5 years, investors have several options. As an investor and founding member you may have your own label Whiskey bottled - with your name, unique cask number, and batch number- to give as gifts, keep for yourself to enjoy, or to sell on the second-hand whiskey market. You may also opt to have your cask stored for longer, allowing to to age further. Or, if you like Whiskey, but are more interested in a smart investment, you can choose to sell the entire cask back to the distillery at a 4% annually compounding interest rate.

With consumers becoming increasingly aware of health and wellbeing, it makes sense that we are seeing a move towards premium products. The sophistication and consumer appreciation of flavour and quality surrounding Premium Irish Whiskey consumption are becoming a significant aspect of Irishs drinking culture. It is simply no longer good enough to pick up any old bottle of spirits from the local shop. Consumers are craving personalisation and innovation in the products from the products they love.
Even though alcohol consumption is seeing an overall decline in the US, the consumption of Irish Whiskey is steadily increasing. The Irish Time report data from International Wine and Spirits Research (IWSR) that alcohol the decrease in alcohol consumption in the US during 2017 was double that of the previous year. What is most interesting, however, is that Irish Whiskey sales enjoyed an increase of 3.9%, as the leading spirit sold. These figures are steadily increasing. In early 2019, Bord Bia reported that Irish alcohol drinks exports were worth 1.25bn the previous year, with the US market for Irish Whiskey growing by over 10%. These figures are reflected in the domestic and european markets, with a sustained growth of 16% in Europe.

Hope it's not too late to say “Happy New Year” but as January 2019 draws to a close things at Blacks have already shifted up a gear in preparation for what is sure to be an exciting year in the brewing and distilling industry.
I finished last time out on Innovation as my central theme and continuing down that road for a bit longer my thought process in January has been taken up at least in part by trying to figure out what trends will prevail this year. How do we insure that we innovate in a direction that will successfully fulfill our target markets beverage requirements while staying true to our own core values as an organisation?
After many conversations, reading as much as I can on the topic and observing the Irish and international market over the last year, I have reached a few conclusions, l guess time will tell if I’m right but any ways, here goes….
For now IPA is still the King of Craft Beer. A good IPA is a thing of beauty and in my humble opinion the skill is in the balance of flavours. Not to bitter,not to sweet and not to perfumy in aroma. In more recent times we have seen the development of substyles within this category in the shape of West Coast IPA with its pine resin and citrus character and New England IPA, cloudy,fruity and lower bitterness.
At Blacks Brewery and Distillery this January we have launched a belter of an IPA in 500ml bottle that sits comfortably in the relatively new substyle of Brut IPA. Launched initially as a seasonal special on draft in 2018 this refined version comes in at just over 5% ABV and is almost to easy to drink.
“Super Dry” is brewed with 100% Irish malt and is bursting with aroma and flavour leading to a bone dry moreish finish.
The late addition of 5 hop varieties produce a fantastically fruity nose with hints of apricot, tangerine, white grape, passion fruit and pineapple along with light fresh herbal aromas of coriander and pine.
On the palate lively, effervescent, crisp and supremely refreshing. Try pairing it with Burgers, Salmon and Brie and feel free to get in touch and let me know what you think.
Get a sneak preview of a special Azacca extra dry hopped version of “Super Dry” at the Cask Ale and strange brews festival running from January 31st until February 2nd.
Super Dry will be available from independent off licences and can be by ordered from ABDI (Alltech) and Vanguard beer.

In a very worthy second place is the trend toward lower ABV. Don't get me wrong, Big beers aren't going anywhere soon but I guess sometimes you just want that hoppy fix without any added extras. The key according to the experts is achieving a lower ABV product that has all the flavour you would expect from a standard beer equivalent. It is also worth commenting that Radlers (Normally a blend of fruit juices and beer and sold at around 3%ABV) have seen a growth too in recent years so let's see how that plays out.
Let me introduce you to our newest seasonal draft beer, an Ultra Session IPA at 2.5% ABV “Night and Day. This one is a great easy going style, refreshing and full of hoppy goodness.
The malt bill comprises of Irish Ale Malt, carapils and crystal, a the blend gives this brew an attractive colour,body and high drinkability. We haven’t held back on the hops either, Cascade, Simcoe,Citra and Mosaic combine and result in fantastic, Citrus/grapefruit, mango,berry and pine aromas. An Ideal beer to start the off your evening or wet the taste buds before getting stuck into a portion of spicy wings or pepperoni pizza.
Other trends that we will probably see, are a continuation of sour beers with evolved and creative styles in this category and a concentration on getting back to the roots and brewing top quality traditional styles like pale lager and traditional regional ales.
On a final note for today, keep an eye out for the freshly bottled new batch of Blacks Worlds End Imperial Stout with chocolate and vanilla. Rated number 1 for Imperial Stout in Ireland by Ratebeer.com, it’s tasting even better than ever.

Firstly, I guess I should introduce myself, my name is Darren Murphy, Brand Ambassador at Blacks brewery and Distillery since January this year. I have Just arrived back to my native Cork after spending six wonderful years working with craft beer in the Austrian Capital, Vienna.
I’m delighted to be back home and so grateful to have been given the opportunity to team up with Maud, Sam and the guys at Blacks working in a role representing authentic Irish products in an innovative small business.
It’s an exciting time for me personally and of course a steep learning curve too with a whole range of new products to familiarise myself with and the unknown of a new position but so far, it’s been a blast…
So, what’s new at the brewery? The guys have had their creative hats on and have come up with two amazing seasonal brews to satisfy the curiosity of your taste buds. A beautifully balanced dry hopped sour called “Wild Thing” is first up. Let’s start with the malt bill, a mixture of 100% Irish ale malt and oats, “we are keeping it local “. This one is a kettle sour with addition of lactobacillus to the cooled wort in the kettle and fermented with west coast ale yeast to 4% ABV. Dry hopping with the addition of Mosaic, Citra, Huell Melon and Mandarina Bavaria add some fantastic tropical fruit aromas to this thirst quencher.
Our Second seasonal brew is a Rum barrel aged version of Blacks award winning Worlds End Imperial Stout. An impressive malt bill of Irish ale malt, Munich, Crystal, Amber malt, Black Malt with added Roasted Barley is brewed to an Abv of 8.5%. A secret selection of hops is added for bittering and once fermentation is complete, the beer is then conditioned on fair-trade cocoa husks and Madagascan vanilla beans. As if that wasn’t enough the guys have gone even further with additional ageing in French oak barrels (previously used in the maturation process of our spiced rum) to add an extra layer of character and flavour to this amazing beer.
